Ramzan or Ramadan, is right around the country. As Muslims from around the world wait to complete their Roza, it is a treat for all our taste buds. Ramzan is synonymous with yummy food and there is no two ways about it. Either you yourself are celebrating or you definitely have friends who do the same. Whichever way it is, you get to eat some delicious food. This Ramzan, try some new recipes straight from the Middle East. They are easy to prepare and a delight to eat. Chicken with Olives and Lemon

This Ramzan Special recipe is given by Chef Khaled Abu, Speciality Sous Chef Ewaan Restaurant, Dubai

You will need-

1 lb of boneless, skinless chicken breast, 1 large onion finely chopped, 3 small red potatoes, peeled and diced, 1 28oz can of diced tomatoes, 4 large garlic cloves, minced, 1-2 cups fat free chicken broth, 1 cup green olives, pitted, 3 tbsp capers, rinsed, 1/4 cup fresh parsley, finely chopped, 1 tsp turmeric, 1 tsp cumin, 1 tsp paprika, 1/2 tsp nutmeg, 1/2 tsp cinnamon, Juice from 1 lemon, fresh squeezed, Zest from ½ lemon, Salt and pepper to taste

How to prepare

  • In a large pan spray some non fat oil and add bite-sized chicken. Saute it till they are brown on both sides and remove from the pan.
  • In the same pan, saute onion and garlic for 5 minutes and re-add the chicken into it. Once chicken is added, you can now add the turmeric, nutmeg, paprika, cumin, salt, pepper and cinnamon.
  • Now add the tomatoes and potatoes along with 1-2 cups of broth. Cover the pan and simmer it over low heat till the chicken is cooked through. This will roughly take about 25-30 minutes.
  • Once cooked, add the lemon juice, lemon zest, capers, olives and parsley. If needed, add in more salt and pepper.

Ramzan Special

Chicken Kabssa

This recipe is given by Chef Alie El Bourji, Atlantis, The Palm, Dubai

You will need

2 Kg. Whole Chicken, 7 Gr. Cardamom Green, 20 Gr.  Salt, 10 Gr. White pepper, 1 Gr. Saffron, 5 Gr. Black Pepper, 5 Gr. Cumin, 3 Gr. Nutmeg, 2 Gr. Cloves, 2 Gr. Whole black pepper, 5 Gr. Coriander Powder, 150 Gr. Onion, 75 Gr.  Tomato Paste, 300 Gr. Fresh Tomato, 250 Gr. Capsicum, 600 Gr. Basmati Rice, 150 Ml Vegetables Oil, 5 Gr. Dried lime, 25 Gr.  Pine Nuts, 25 Gr.  Almond, 1 Gr. Bay Leaves, 2  Sticks Cinnamon

How to prepare

  • Chop the onions, tomatoes and capsicum into wedges and fine chop the coriander
  • In a casserole heat some oil and add onion and capsicum. To this you need to add the cinnamon sticks, bay leaves, whole cardamom, cloves and whole black pepper. Now you need to add your chicken and cook for 5 minutes.
  • Now add the tomatoes, all the spices, salt and pepper and cook for a few minutes.
  • At this point, add the water and bring it to a boil. After this, reduce the heat and cover for 20 minutes
  • Add rice to the casserole and mix well. Re cover the pot and simmer for 30-40 minutes. Once the rice is cooked, add the raisins
  • For serving, place the rice in a dish and top it with chicken. Garnish the dish with almonds and pine nuts

Ramzan Special

Ramzan Special Um Ali Ice Cream

This recipe is given by Mr. Alie El Bourji, at Asateer, Atlantis, The Palm

You will need

1.134 ltr Fresh Milk, 344 ml Fresh cream, 84 g Milk powder, 274 g Dextrose, 100 g Granulated, 12 g Stabilizer, 52 g Trimoline, 250 g Assorted Baklawa, 50 g Pistachio, 50 g Raisin chopped, 25 ml Rose water

How to prepare

  • Hand blend the milk, milk powder, dextrose and cream until it becomes smooth
  • Place this into a pan and bring it to 40 degree celsius. Whisk the sugars and stabilizers into this
  • Bring this mixture upto 85 degree celsius and then take it off the flame. Cool this as quickly as possible
  • Freeze this for 6-12 hours
  • According to the instructions put this mixture into an ice cream machine
  • Add very finally chopped baklava, raisin, pistachio, and fold into ice cream mix by spatula, and put in container, store in the freezer.
