From north to south or east to west, Pickles remain common yet indispensable phenomenon in all the “thalis”. The diversity of culture in our country has added myriad taste to our cuisine and pickle too could not escape this diversity. As you travel across various states, no matter what the basic ingredient is, the pickle will taste different reflecting the extant cultural cuisine.  All vary in taste as well as in preparation.

Most of us love the tangy taste of pickles but it gives us jitters when comes to making one. The time consuming process of making pickle is replaced by convenience of the supermarket shopping. But love cannot be ready-made. Don’t you worry we have some easy to make pickle recipes, which can leave your guests with everlasting taste to cherish and make your meals more delectable:-

Sheer mention of “gajar ka achar” in menu leaves your mouth flooded with water. You don’t have to turn to your mom for this. Just peel and cut carrots equally, boil them in water for ten minutes. Remove water and let them dry in sun for few hours. Meanwhile you can prepare the masala. Mix garlic and ginger paste in mustard oil till the aroma sets in. Next add salt, chilly powder, black mustard seeds and turmeric. Fry till the mixture leaves oil. Now add mixture of Jaggery and vinegar. Stir the mix for five minutes. Add this to the carrot and put in a mason jar. In two days your pickle is ready to be relished.

Unlike other pickles this one is a refrigerated pickle. Place thinly sliced (round in shape) cucumbers topped with onion in a jar and make 3 layers of cucumber and onion. Combine vinegar, salt, sugar, turmeric, mustard seeds, celery seeds, red pepper, black pepper, n thinly sliced garlic cloves in saucepan and stir well. Bring to boil. Pour this over the cucumber mix and let it cool. Refrigerate the pickle for 4 days. Use it in your next party and suddenly your guests will become your fans and will die to party with you every time. Yippee!!

As the name suggest its a recipe from the south. It can be accompanied with parathas, idli, dosa or curd rice. You need to chop onions, soak in tamarind water and take out the extract . Keep both aside. Heat oil in a saucepan and add mustard seeds and urad dal. Now add chopped onion and salt and sauté till they become transparent. Add tamarind extract, jaggery, hing, chilly powder and boil for few more minutes. Now add, roasted methi seeds and saute for a minute. Remove the pickle and store in box let it cool. You can store this pickle for a week.
