OPOS(One Pot One Shot) is a cooking technique designed to unchain you from the kitchen, cut drudgery and empower anyone to cook confidently. All OPOS recipes are done in one pot in one shot. No supervision, fear or complicated steps.

How OPOS helped me
I am a stay-at-home mom, with 2 toddler kids, living in a middle eastern country. OPOS helps me offer tasty healthy food to my family as well as spend quality time with them. I struggled to learn cooking, because my mom fell sick when I was doing my schooling. I had no one to help me learn. My friends told me about OPOS. I learnt the basics with the help of the OPOS manual. I then joined the FB group United By Foods to learn more and help spread the magic of OPOS! OPOS is addictive. It makes you a foodie and a health watcher.

All about OPOS
A recipe using OPOS techniques follows: layering, dum and hydrodistillation.

We will be layering and spreading the ingredients evenly one by one.
Mix and let marinate until layering
1/2 cup of each (carrot, beans, potato, cauliflower)
1 slit chilli
3/4 cup yoghurt
1/4 cup fried onions
1/2 tsp each (salt, chilli powder, garam masala)
In a 2 ltr cooker, layer 5 tsp of water, 1 tsp ghee, 1 bay leaf, 1 piece cinnamon, 1 crushed cardamom, 1 clove, 1 chopped tomato.
Layer half the vegetables mix.
On top of it, layer the washed soaked rice- 1 cup.
Add 1/4 cup chopped mint.
Layer the remaining vegetable mix.
Add 1/2 cup water. Close the cooker. Place the weight on top. Pressure cook on high for 2 whistles. Let pressure settle. Fluff up and keep closed for 10mins. Serve. Can add coriander leaves and more fried onion for garnish.
OPOS minimises the use of oil, salt and spices. It frowns upon chemicals/ highly processed food. It improves nutrition by proper cooking and by its focus on cooking fresh, seasonal food from scratch.
All these translate into major health benefits over a period of time. Experience it to believe it !
A briefing about 2 techniques below.
Autolysis and retained heat cooking-
Self cooking and cooking with retained heat.
Add 1 cup water, 1/3cup sugar, 1 pinch food color, 1 tsp ghee. Pressure cook for 1 whistle. Lift weight to release steam immediately. Add 1/4cup double roasted rava. Mix well. Close pressure cooker. Serve after 20 minutes.
Pressure cooking without water at the highest heat for the lowest time to maximize color, flavor and nutrition.

Recipe- flash cooking
Chop 300gms snakegourd
Add to a 2 ltr pressure cooker. Sprinkle salt. Pressure cook on high for 1 whistle. Release pressure immediately with a ladle. Open. Transfer to serving bowl. Tadka can be added pre/post flashing. Spice powders if desired can be added to vegetable pre flashing. Make sure dry powder does not touch the cooker base, if it happens, will cause burning.

I feel unlucky that OPOS wasn’t there 30 years back. I struggled a lot to rustle up tasty food, where taste is consistent for many years. Now the food that I make, tastes good every time.
I love to cook. I have tried zillions of websites to help me with one consistent taste on my attempts when I try their recipe. I succeed sometimes and fail as well. And then crossed with OPOS. You tell me what cooking mode is, I will have them to spotless finish. It’s magic I experienced till date, I am cooking only OPOS to get over it.
